French Cooking Class – 01

 

*this is an advanced class and is not recommended for beginner cooks, if you are a confident home cook, this class is for you. Our less advanced but equally delicious French Provinciale cooking class is available here.

 

The French did everything first… well ok that’s not entirely true, but what the French did do first was record recipes and techniques in near scientific detail and built on that from generation to generation. What is so special about French cooking is that through technique, it can turn simple ingredients into something complex and refined, both visually and on the palate. It was French cooking that helped guide us into the gastronomic revolution, and French technique that gave us a better understanding of WHY we do what we do in the kitchen. This French cooking class focuses on foundation and advanced cooking principals and techniques. A fast paced Le Cordon Bleu speed date, with enough bells and whistles to tickle any home chefs fancy.

Here’s what’s cooking…

seared scallops, cauliflower cream, truffle, herbs

confit of duck, golden shallot and sour cherry jus

brown butter leek julienne

herbes de Provence baby beetroot sauté

crispy duck fat potatoes

dark chocolate soufflé

beurre noisette chocolate sauce, fleur de sel

Salt & Co. COVID19 arrival procedure:

When you arrive to your cooking class, your phone – if you choose to use it for photos etc during class – can be sanitised with the help of one of our team members. From there, any other other personal items that you don’t need with you during the cooking stage of the class can be set down in the Dining Hall as per usual. Upon entering the kitchen space head directly to a hand wash station and give your hands a thorough wash. We also ask that if anyone is feeling any cold or flu like symptoms at the time of entering the venue to please not enter the venue. We are applying this to ALL people entering our venue; customers, our team and all services.
